The Apple Watch operating system, watchOS, is built by secretive teams that don't share anything outside of those closed doors. Leaks tend to occur when alpha builds begin being distributed in December or January, but even then, such leaks are rare.
There is limited space, literally, on Apple Watch for features, apps, and other upgrades. Apple has to be sparing with how it handles watchOS to ensure it isn't hogging internal storage or adding useless features.

watchOS 27 features
Apple's operating systems don't leak, generally. There's the occasional alpha build that gets out, but even those only provide so much information ahead of time.
Liquid Glass didn't make much of a splash on watchOS given its limited UI space. Apple could continue to integrate the new design material into the OS and change some system interactions.
The biggest updates to watchOS each year include new ways to view and analyze existing health metrics and new watch faces. Health integrations and new analysis is always a bonus for users that already collect health data passively via Apple Watch.
There's a chance the biggest upgrades with Apple Watch will occur off device. Apple Intelligence systems in Apple Health on iPhone could use data gathered from Apple Watch for more advanced understanding of a user's overall health.
Apple won't reveal any details about watchOS 27 until WWDC on June 8, 2026.
